There is nothing more South African than biltong, potjie and a braai... so why not combine the three and make a creamy biltong pasta potjie! After trying this recipe, you are bound to add it to the top of your list as one of your favourite meals.

Ingredients for No 3 Potjie (serves 16)

  • 1.5kg Biltong

  • 1 Pack of Bacon

  • 2 Tots of Sunflower Oil

  • 3 Garlic Cloves, crushed and chopped

  • 2 Mushroom tins

  • 6 Onions, sliced

  • 1 Cup full-cream milk

  • 1 Cup fresh cream

  • 1kg Pasta Shells

  • 2 Green peppers, sliced

  • 500g Cheddar cheese, grated

  • 1 tsp. Braai spice

  • Salt and Pepper, to season

For the Sauce:

  • 1.5L Boiling water

  • 2 tsp. Mixed green herbs

  • 4 Blocks chicken stock

  • 1 Sachet tomato paste


Method


Note: Prepare the pasta as per packet instructions and set aside

  1. Place your potjie over hot coals. Add oil and fry the onions until it is soft. Then add garlic, green pepper, mushrooms, and bacon. Continue to fry until the bacon is sizzling and cooked.

  2. For the sauce, combine boiling water, green herbs, chicken stock and tomato paste.

  3. Add the sauce mixture to the potjie and stir well with the onions, green pepper, mushrooms and bacon.

  4. Add the biltong and place the potjie lid on. Allow to simmer for about 5 minutes and then remove the lid.

  5. Add the full-cream milk, fresh cream and cooked pasta. Place the lid back on and let it continue to simmer for about 10 minutes.

  6. Sprinkle cheese, mix well and serve!

Tip: If the potjie cooks dry, you can add a bit more milk or water until it reaches a consistency you’re happy with.
